For seeds and plants, “organic” refers to the fact that the plants were grown without using any chemical fertilizers, growth agents, antibiotics, or pesticides. Organic fabric, especially organic cotton, is important to the fashion industry because these plants tend to drink up less water and growing and harvesting them can be safer for workers. However, they do produce less of a yield (a smaller amount) per crop–maybe the plant is smaller than conventional cotton or pests ate part of the crop–so it is more expensive.
